Hello from Bali!
So I've been on the island for a little over a month now and I'm starting to get the hang of things. One of my first purchases was a small coal BBQ (which I got for a steal, due to it's different wheels?) Assembly was rather entertaining as the instructions were in Bahasa, but in the end all the nuts and bolts were accounted for and I only had one funny looking part leftover. Either way, it was a bit of a shock to switch back to coal full time - but my neighbors John and Meredith Lancett were a huge help in this domain. Based on John's recommendation I picked up this "portable" BBQ from the hardware store (even that's a loose term...) and some coconut based coals. They take a while to start but they burn for a good long time - But I use the little thing to start them coals and then transfer them to the grill.
I actually bought a rotisserie/toaster oven but I have yet to try it out - Instead my first foray on my new grill was to simply butterfly a chicken on it. That worked great and my next mission was a side of pork. That one I overcooked - but my guests didn't seem to complain. The best part about it here is the variety of sauces and marinade possibilities. My issue will be staying away from the old tried and true recipes and getting into some new stuff: like real Chicken Satay! I gotta learn how to make that sauce... One thing that amazes me is how on the beach these guys will turn any old piece of metal into a BBQ and then start madly cooking these tiny little satay brochettes - two bites each tops!
That's it for now, but I'll get my act together to cook something new (Fresh fish? I think so...) and then I'll really have something to post about!
