New challenge! Lately, I've been playing around with Pinterest a whole bunch - and I have to admit, it's kind of fun. The best part is finding pictures of BBQ-ed stuff and then trying to re-create it from scratch. This week I tackled the daunting Jalapeno poppers I saw in a picture from I Breathe...I'm Hungry...

The trouble with these suckers was that anytime you wrap something in bacon - you'll probably have to cook the bacon first. The original recipe involves baking them, but there's no way I'm giving into that. Instead, I just nuked the bacon for about 3 minutes to get it going, then baked them on a cookie sheet for about 20 minutes in the BBQ (indirect heat if possible, but with a baking sheet it shouldn't matter). Lastly, we grilled them for about 2 minutes on each side to make them crispy and golden. Be careful with bacon on the grill! It flares up like mad and if you don't watch it like a hawk - you get burnt bacon...and that's a killer.
Bacon Wrapped Jalapeno Poppers
Mozzarella cheese
Bread crumbs
finely chopped green onions
Finely chopped mushrooms
Cilantro, chopped
Jalapenos - sliced in half and seeded
Bacon (buy the thin stuff!)
Slice the peppers in half and seed them. Then prepare the mixture. The next time I try this I'm gonna use a softer cheese so that I can just make a spread, because filling each one took way too long. Then microwave your bacon (or bake it in the oven for about 5 minutes - don't let it get crispy!) Wrap each one in at least one strip of bacon, I tried to do just half but they weren't long enough to wrap properly, and remember! Bacon shrinks when cooked!
